Let me be totally and completely honest with you, when I first saw this recipe I thought, "I must be dreaming." I mean I seriously thought that there is no way on this earth that you could ever get jelly inside a cookie! NEVER! But look! Here it is! An answer to my prayers! Okay... not exactly, but you get where I'm coming from. Right? What is more of an American classic that a PB&J sandwich? It just makes me feel like a little kid getting a sandwich in the lunch that my mother so lovingly packed. But now I'm rockin' it the grown up way. (Sorta) They're so yummy though. I was just filled with glee when I ate these. It was a happy moment. A VERY happy moment...
Peanut Butter and Jelly Cookies
You will need:
1/2 C butter
3/4 C peanut butter
1 1/4 C firmly packed brown sugar
1 egg
3 Tbsp. milk
3/4 tsp. baking soda
2 C flour
1/4 C jelly or jam
1. Preheat oven to 350 degrees Fahrenheit.
2. Place the butter, peanut butter, and brown sugar in a large bowl and mix with an electric mixer on medium speed for 2 minutes, or until completely combined.
3. Add the egg and milk and mix on medium speed for 2 minutes, or until light and fluffy. Add the baking soda and mix for 30 seconds. Add the flour and mix until completely incorporated.
4. Roll the dough into golf ball-sized balls. Holding a ball in the palm of your hand, press your thumb in the center to form a deep hole. Spoon about 1/2 teaspoon of jam into the hole and pinch the top closed. Gently roll the dough back into a ball shape and place seam side down on an ungreased baking sheet. Repeat with the remaining balls and place 3 inches apart on the baking sheet.
5. Bake for 15-18 minutes, or until lightly browned on the edges. Remove the cookies from the pan immediately and cool on parchment or waxed paper.
